Morel Soufflés on Sunday!

Last morel season we were lucky enough to snag 6 pounds of these beauties from an enterprising young Blue Ridge hill trekker!
Since our Sunday breakfasts are always the highlight of our weekend fare, on May 6th, Tom cleaned, chopped and sautéed the mushrooms in butter, then added chopped shallots, a touch of thyme and bit of heavy cream, and whipped up fantastic morel mushroom soufflés for each of our guests.
We’ll be having more fresh morels as we get a chance and serving fresh morel soufflés for Sunday breakfasts once they are in season again.
If you like mushrooms, you’re going to love the deep woodsy flavor and fragrance of these fantastic wild beauties. If you don’t like mushrooms, Tom will be happy to whip up one of his delicious herb and cheese omelettes while the soufflés are reaching their peak in the oven.
